  • Ceviche/Shrimp Cocktail Recipe

    Ceviche – Shrimp:

    2 lb fresh unshelled shrimp

    1 red onion

    Juice of 2-4 lemons

    Juice of 10 oranges (2 ½ cups)

    ¾ cup ketchup

    ½ to 1 tsp Tabasco

    ½ tsp oil

    ½ tsp cilantro

    ½ mustard

    Salt and pepper to taste

    Peel, de-vein and wash shrimp well. Place shrimp in pan of boiling water, cook for 5 min. Drain and set aside. Slice onion very thin. Pour boiling water
    over the onion and drain. Place onion and lemon juice together to soak for about 10 min and set aside. Combine orange juice, ketchup,mustard, oil,
    Tabasco, parsley, salt and pepper. About an hour before serving, add prepared onion and shrimp and refrigerate. Serve in small individual bowls,
    garnishing eachwith a sprig of parsley. Side dishes: popcorn and white rice.

    I dont exactly know the cals lol but it is deffintly protein packed and low in carbs.
